Summer’s winding down 🙁 BUT! There is always time to enjoy fresh, yummy, cool salad, right?! This is a recipe that my mother used to make and a favorite of ours at home. We eat it with chipotle ranch dressing, but feel free to use your favorite kind of dressing. Chipotle ranch happens to add a nice kick to the salad and it complements the smoky bacon taste really well. There are so many goodies in this salad!!
This is a great way to take advantage of summer farmers’ markets, too!
In a pinch, you can always use leftover roasted chicken or rotisserie chicken – both would be great options!!
Roasted Chicken BLT Salad
- 10 pieces bacon
- 1 lb. chicken tenders
- salt and pepper to taste
- 4 tbsp. olive oil
- 1 pint cherry tomatoes, halved
- your favorite lettuce, ripped into small pieces
- 1 c. shredded carrots
- 1/2 c. cheddar cheese
- your favorite salad dressing
~ To start, chop and cook the bacon in a skillet. Listen to the crackle and smile. This bacon will be edible soon enough. This process usually takes me about 20 minutes or so because I like my bacon really crispy.
~ When the bacon is done, drain it on a plate lined with paper towels. This removes the excess grease that no one REALLY needs.

~ Once the bacon gets going in the pan, prepare your chicken tenders. I place them all in a 8×10 roasting pan. I salt and pepper each side and then drizzle olive oil across them. Place them in a 375° oven and allow to roast for about 15 minutes. Remove and let cool slightly as to not singe your hands.
~ When the chicken is done, cut it into bite size pieces. Place it in the bottom of a large glass salad bowl. Top it with the slightly cooled and drained bacon.
~ Add the lettuce, carrots, and tomatoes to the bowl. Sprinkle the top with cheddar cheese or the cheese of your choice. Using salad tongs, toss this beautiful salad together. The goodies tend to sink to the bottom, so be sure to try and incorporate the best that you can.
~ Place a healthy portion on your plate and enjoy with your favorite dressing! This salad is simple, flavorful, and packed with textures! <3
