I like experimenting with different grains, starches, etc. I think it’s fun to add variety to boring run-of-the-mill rice or pasta. Farro is a unique Mediterranean grain and it has a super crunch to it that you don’t come by with other starches. It pairs really well with bold flavors! You just have to be sure to rinse it before cooking it! You can soak it overnight, too. There are instructions on the back of the bag 🙂
I decided to make farro with two of my favorite veggies — tomatoes and spinach — along side some marinated grilled chicken. I wanted to keep the chicken relatively mild since the farro was going to be loaded with flavors.
Farro with Garlicky Spinach and Tomatoes
- 1 c. of prepared farro
- 2 tbsp. olive oil and 2 tbsp. butter
- 8 cloves of garlic, finely minced
- salt and pepper to taste
- pinch of roasted red pepper flakes, optional
- 1/2 c. dry white wine
- 1 bag of baby spinach
- 1 pint of cherry tomatoes, halved
- 1/4 c. cup basil, finely chopped
- 1 lemon, juiced
- 2/3 c. grated Italian cheese (I used a Parmesan & Romano blend)
~ Prepare the farro according to the directions on the package. It was approximately 1 c. of farro to 3 c. of water. It cooked for about 1/2 hr but make sure to keep an eye on it and add more liquid as needed. You don’t want it to burn! As I mentioned earlier, make sure to rinse it first.
~ While the farro cooks, prepare the rest of the meal! Warm the olive oil and butter in a saute pan and add the minced garlic. Allow the garlic to cook for about one minute, then add some pepper and salt to taste. If you like a little heat, feel free to add some roasted red pepper flakes at this point.
~ Add the white wine and allow this heavenly and aromatic mixture to come to a slow boil. Lower the heat and allow it to cook for a few minutes until the wine reduces a bit.
~ Empty the bag of spinach onto the garlic and wine. Stir slowly, watching the spinach wilt. It’s always amazing how much spinach cooks down!
~ Once the spinach is mostly wilted, throw the cherry tomatoes in with it. Add the basil and mix all together. Allow this mixture to cook for about 5 minutes on medium heat, allowing the tomatoes to soften.
~ When the farro is done, mix it into this delicious sauce with the veggies!!
~ Remove from the heat and stir in the lemon juice and cheese. Season with salt and pepper if you need to. You probably won’t, but you never know!
~ How pretty is that? Serve it alongside some chicken and you have a really healthy and flavor-packed meal!! 🙂 <3 The chicken can soak up some of the yummy sauce that will inevitably seep out of the farro 🙂 🙂
