Who doesn’t love baked potatoes? Who doesn’t love casseroles? This dish brings the two together and creates warm comfort food that sticks right to your ribs! It also reheats really well for lunch the next day 🙂 I found it here but made some tweaks as I tend to do!
I always like meals that use a minimal number of pots & pans — I had that going for me, too, when making this recipe. I also like that you can doctor this recipe to your liking, i.e. adjusting toppings and adjusting spices that are your favorites! You can also make this vegetarian if you remove the chicken 🙂
Loaded Baked Potato & Chicken Casserole
- 5 large butter potatoes, washed and cubed (you can peel them, too, if you want but I didn’t)
- 1 lb. chicken breasts, cut into cubes
- 1/3 c. olive oil
- 1 1/2 tsp. salt
- 1 tbsp. black pepper
- 1 tbsp. paprika
- 2 tbsp. garlic powder
- 3 tbsp. your favorite hot sauce (I used sriracha)
- 2 c. shredded cheddar cheese
- 8 slices cooked bacon, crumbled
- 1/2 c. scallions, chopped
- sour cream for serving (optional)
- parsley flakes for serving (optional)
~ Preheat oven to 450 degrees and prepare your baking dish. I used an oval 10″ pan but a 9″x13″ would be good, too! Spray it with cooking spray or olive oil spray.
~ In a large bowl, mix together the olive oil, salt, pepper, paprika, garlic powder, and hot sauce. Add potatoes to this mixture and toss well to coat. Allow to marinate for at least 10 minutes. Drain the sauce into another bowl and reserve for now.
~ Spread potatoes evenly into your baking dish and cook for 45 minutes, making sure to stir them every 15 minutes.
~ While the potatoes cook, prepare your bacon and your chicken. Fry the bacon in a skillet until it is done to your liking. Drain on paper towels and set aside.
~ In the same skillet, cook the chicken in the residual bacon grease until golden brown. Remove the chicken from the skillet and toss it in the marinade from the potatoes.
~ After the 45 minutes are up, top the potatoes with the chicken and bake for another 10 minutes.
~ Layer the cheese, bacon, and green onions on top of the chicken and bake for another 3-5 minutes (or until the cheese is melted).
~ Top with additional scallions if you like and then some sour cream and parsley!
