In case you haven’t noticed already, I’m kind of obsessed with my Crock-Pot. There are just too many uses for it to list and I’m basically in love with the ease and simplicity. Basically, prep it, set it, and forget it!!
Apples and cranberries are two of my favorite fall flavors. This combo is amazing and a great way to use up the rest of the cranberries from this recipe for Apple, Pear, & Cranberry Crisp which I posted a few weeks ago. The lemon cuts through the sweetness of the apple and the vanilla adds a rich flavor that you can’t get anywhere else. Since the apples are sweet, you literally don’t need to add a granule of sugar!! This applesauce is so healthy and you can add some of your favorite flavors to it!
- 5 honeycrisp apples — peeled, cored, and cut into thin slices
- 1 c. cranberries, washed and drained
- 1 medium lemon
- 1 cinnamon stick
- 1 vanilla bean, split open
~ Prepare your apples and place them in the bottom of the Crock-Pot.
~ Pour the cranberries in and zest the lemon over the fruit. Cut the lemon open when you are done and juice it into the Crock-Pot. Stir to combine.
~ Drop the cinnamon stick into the mixture and nestle it into the fruit.
~ Take the vanilla bean and scrape out as much of the beans as you can. Scrape and scrape and then spread the beans over the apples in the Crock-Pot. Throw the pod into the mixture, too, when you’re done!
~ Stir one last time to combine. Set the timer to 3 hours and cook it on High. Check on it every hour or so, stirring as you can. If you feel better cooking it on Low for 6 hours, feel free. I just wanted to try the applesauce ASAP. <3 When it’s done, break the fruit down to a consistency that you like with a wooden spoon!
