This recipe was a childhood favorite! My mother would make it all of the time and I loved it. What more could you want? Chocolate, chocolate chips, gooey cake, and pudding? It’s kind of like a lava cake!
The trick with this recipe is that the water that you pour over the top at the end creates the pudding! Easy and delicious — my kind of recipe! Perfect for your next holiday gathering or a Tuesday night. Ya know. Whatever 🙂
Chocolate Chip Pudding Cake
- 3/4 c. all-purpose flour
- 1/2 c. sugar
- 1/2 c. unsweetened cocoa powder
- 1 1/2 tsp. baking powder
- 3/4 c. milk
- 1 tsp. vanilla extract
- 2 tbsp. vegetable oil
- 2/3 c. light brown sugar
- 1/2 c. mini semi-sweet chocolate chips
- 1/4 c. unsweetened cocoa powder
- 1 1/4 c. hot water
~ Preheat oven to 350 degrees.
~ Mix together all of the ingredients for the cake in a stand mixer. Easy, right??
~ Pour the batter into a greased 9″ casserole dish or square pan.
~ Mix together the ingredients for the topping with the exception of the hot water. Sprinkle the topping on top of the batter.
~ Pour the hot water over everything and DO NOT STIR. Place directly in the oven just like this. Trust me.
~ Bake for 30-35 minutes. It’ll be bubbling!!
~ Serve warm with vanilla ice cream. Are you kidding me?!?!
*** Variations — feel free to add walnuts or pecans to this…I’m also thinking that dark or milk chocolate chips would make an interesting cake, too!! ***
