These ones are even better than the first ones I made! These ones speak more to me as a Mediterranean woman — the feta really sends me into over drive. 🙂 How lame do I sound?!
Anyway, I made veggie egg cups for breakfast a couple of weeks ago. They were amazing. However, one of the things I liked about them was their versatility and how you can edit them based on your mood. Hence, 2.0 was born!! 🙂
Veggie Egg Cups 2.0
- 6 eggs
- 1/2 milk
- 1/2 c. feta cheese
- 1/4 lb. honey ham diced
- 1 green bell pepper, diced
- 1 c. spinach, roughly chopped
- 5-6 chives, minced
- salt and pepper to taste
- sprinkle of dried oregano
- sprinkle of dried basil
~ Mix all together. Pour into greased muffin tins.
~ Bake for 20-23 minutes @ 375 degrees. Enjoy your breakfast on the go, just like I do. 🙂 These are superb!!! Thanks, V. 2.0!!
