Summer fruits are THE best. Yes, fall fruits are amazing, but summer fruits make apples, pumpkins, etc. pale in comparison. This recipe takes two of the best (IMHO) — blueberries & peaches — and turns them into a breakfast that basically ‘cooks’ itself overnight.
This recipe is perfect for someone like me…..who may or may not sleep until the very last moment in the mornings. Taking a few minutes at night to put together a super healthy breakfast makes me feel accomplished and I know I’ll be starting my day off right! I also know that I’ll have a yummy and satisfying breakfast ready to enjoy when I get to work which is waaaaayyy better than dropping money on garbage at a drive-thru coffee joint, amiright?!
These overnight oats with the added chia seeds keep me full for a really long time, too, which keeps the excess mindless snacking during the workday at bay. Over time, I have started using almond milk or coconut milk instead of regular milk — this photo is a little bit older!!
The benefits of these oats are innumerable — you should stop reading and just go make them! Go!!! 🙂 🙂
Summer Fruit Overnight Oats
- 1/2 c. old-fashioned oats
- 1 tbsp. chia seeds
- 1/2 c. milk — your choice (regular, low fat, almond, coconut, soy)
- 1 tsp. vanilla extract
- 1/2 tsp. cinnamon
- 1 tsp. sweetener (optional but I find it necessary and I don’t have a major sweet tooth…use your favorite sweetener — sugar, agave, maple syrup, honey)
- 1 lemon, juiced
- 1 medium sized peach, cut into bite-sized pieces
- 1/2 c. blueberries, washed and dried
- 1/8 c. coconut flakes, preferably unsweetened (optional)
- 2 tbsp. sliced unsalted nuts — your choice (optional)
~ In a deep Tupperware container, layer your oats and your chia seeds. This will form your base.
~ In a 2c. measuring cup, combine your choice of milk, vanilla extract, cinnamon, choice of sweetener, and lemon juice. Stir until it is nearly completely blended — this will make for a more even flavor profile. Pour it all over your oats and seeds.
~ Sprinkle your fruit and optional coconut flakes & nuts on top of your damp oat mixture. Cover tightly and place in fridge. Try and wait til the morning to pop this baby out of there!! Give this at LEAST 6 hours to ‘cook’ and be ready to eat.
~ In the morning, stir everything together. Enjoy the easiest and healthiest breakfast you’ve ever had without having to lift a finger in the morning to make!! It’ll carry you through until lunch and you’ll feel super healthy. What could be better?? Honestly. Enjoy!!! <3
